My super bowl

It's been recent as of last year that I've really enjoyed the Super Bowl. With the Packers (my team!) taking it home last year. This year neither are really of interest. Instead I got to see my own super bowl as the UVU rugby girls demolished USU making them still undefeated since fall! We still will be having a party, eating and enjoying the commercials this year! So good luck to both teams! May the coolest plays win hehe.

Holidays

Already?  It's already 2012?  I don't think so.  I'm pretty sure I'm still stuck in the past. 
Or at least I like to pretend I am, ha.

The holidays came and went for us very quickly.  Just as it does for some if not all of you.  It has been more entertaining this year as the Twins notice all the lights and music around them.  They loved dancing to Christmas music and watching the lights on the trees. 
We spent Thanksgiving with the in laws and had an amazing large and filling meal on top of kids trying to swallow marbles and fall down stairs.  



Christmas was much more boring and lazy. Or I should just say lazy.  That always means it was a great holiday!  I ended up staying up most the night with a restless O, and waking up early to watch as they the gremlins ripped at their wrapping paper.  Enjoying the box and paper afterwards.  

2011 was an alright year.  The beginning was much better than the ending but I think we enjoyed it non the less!  With the girls walking, talking and slowly showing us how crazy and energetic they really are- I feel like 2012 will be an even better year!  

I'll be starting at a new school this semester.  Giving me the entire day to be with the twins and then only 3 evenings a week in class.  I'm excited and nervous all at once.  It is taking some big steps and changes to go to this school and just need to trust in myself that I can get this done for my kids.  

I hope everyone had amazing holidays and kept safe and warm!  We have yet to have snow here and if it's going to be like that I may just move to Florida! ;)  
Either way, I'm off to bath some children who conveniently covered themselves in oatmeal!

Maple & Cinnamon Baked Apples(or Pears)



Forever ago (OK not that long ago) we did the Reboot for 10 days.  5 Days of super healthy raw food and 5 Days of juicing.  I just have to post a super easy and fast breakfast that is beyond yummy while also fitting into the holidays. This is something that can be done when you wake up, pop in the oven, get ready, eat, and move along.

2 large hard Pears or Apples (Fuji, Rome, Pippin, Granny Smith or Jonathan work great)
2 tsp. Pure Maple Syrup or Agave
3 tsp. water
1/4 tsp. Cinnamon
1 Tbsp. Raisins
Preheat the oven to 375 degrees. Slice off the tops of the apples or pears and set aside. With a small knife or apple corer, hollow out a 1” cylinder in the center of each apple, being careful not to poke through to the bottom. If you are using a paring knife, you might need to make the initial cut and then use a spoon to dig out the core.
In a small bowl, whisk together the next three ingredients. Divide the raisins between the apples or pears, and then fill with the liquid mixture. Don’t worry if the filling doesn’t reach the top, it will expand as it cooks. Replace the tops on the fruit and place in a small baking dish lined with parchment paper, making sure that the fruit are snug in the dish so that they don’t tip over. Cover the dish with foil. With a paring knife, cut three slits in the foil to let steam escape. Bake for 35-45 minutes or until tender. Drizzle with extra maple syrup or agave upon serving, if desired.
